Rachael spends most of her time chasing organoleptic properties and fulfilling her mission in the preservation of artisan cheesemaking.  She accomplishes this through education, palate titillation, sensory stimulation, and good, old-fashioned cheesemongering.  She is a cheese and wine writer, educator, and aroma enthusiast. Nowadays, you can find her mongering and educating at The Curd Nerd in Syracuse, New York, which is a cut-to-order cheese shop with an exceptional, rotating selection of artisan fromage.

Tanya Henry is a Northern California based journalist and communications professional who has been writing about food in the San Francisco Bay Area for more than 15 years. Tanya has written for numerous publications including Culture Cheese magazine, Edible Marin and Wine Country, Marin Independent Journal (as restaurant critic), San Francisco Chronicle, and Pacific Sun among others. She is a consultant for the Specialty Food Association and a graduate of the California Culinary Academy.
